Zucchini Tuesday...

Sometimes the simple things in life are the best.

Like Zucchini Fritters. No fuss, just grated zucchini, a couple of eggs, enough flour to bind and a little salt and pepper.


Served with some grilled halloumi and a cucumber and yoghurt salad (topped with cumin and parika). Delicious.

    1. Yes, the strange squeak. I think I remember Nigella Lawson referring to it as polystyrene cheese and the comparison is very apt, I think.

  3. Yum. I make a veggie fritter regularly with whatever veg I have on hand. But I call them pancakes cos they're more appealing to the kids then.
